Many urban Americans struggle to be healthy in the face of economic and built environment factors that create inadequate urban food systems. Local urban governments face significant challenges in mitigating these factors. This lecture explores some of these challenges as well as proposes the need for local government promotion of local food entrepreneurship as an additional way to prompt healthier citizens.
